A recipe for a spring salad with asparagus, halloumi and raspberries

Ingredients (2 servings)

  • 100 g baby spinach
  • 200 g green asparagus
  • 225 g halloumi cheese
  • a handful of raspberries
  • 80 g pearl couscous

Preparation

Cook the couscous according to the instructions on the packet and set aside to cool slightly. Wash the asparagus thoroughly, trim off the tough ends and cut into smaller pieces. Heat them in a frying pan with a little water for a few minutes until they soften but remain firm.

Slice the halloumi and fry in a dry, well-heated frying pan until golden brown on both sides.

In a separate bowl, combine all the sauce ingredients and mix thoroughly. Transfer the spinach, couscous, asparagus and halloumi to bowls. Add the raspberries and pour the prepared sauce over everything. Serve immediately, whilst the cheese is still slightly warm.
