It's a combination of a crunchy cookie base, delicate cheese filling and chocolate topping. It's perfect as a second breakfast, dessert or something to ‘lift your spirits’ when you're craving a quick homemade cake.

1.5 crushed Fitking Cookie Sesame cookies

10 g chocolate cream

Cheese filling

  • 1 egg
  • 100 g cottage cheese
  • 150 g vanilla skyr
  • 25 g vanilla pudding (powder)
  • 2 tablespoons erythritol

Topping

  • 10 g chocolate cream
  • 1 teaspoon hot water

Preparation

Crumble the biscuit with your fingers and mix with the chocolate cream. Transfer the mixture to a small mould or ovenproof dish, pressing down lightly to form a compact base.

Place all the ingredients for the cheese mixture in a bowl and blend until smooth and uniform. Pour the mixture onto the prepared base.

Bake for about 17 minutes in an air fryer or about 25 minutes in an oven preheated to 180°C (top and bottom). After baking, set aside to cool slightly.

Mix the chocolate cream with a teaspoon of hot water to obtain a smooth glaze. Spread it over the top of the cheesecake and decorate with crushed biscuits, if desired.
