- Why is it worth it?
This is the type of dessert that you take out of the fridge and you already know it's going to be good. The creamy layer envelops the palate, and the crunchy base contrasts nicely with the velvety centre. One serving is enough to feel satisfied, but the small size cleverly tempts you to reach for another.
Ingredients
Base
- 70 g cereal biscuits
- 2 heaped tablespoons of liquid peanut butter / butter / coconut oil
Cheese filling
150–200 g ALLNUTRITION FITKING PROTEIN CREAM MILKY CARAMEL PEANUT cream cheese filling
Decoration
- a few squares of white chocolate
- a handful of chopped nuts
Preparation
Blend or thoroughly crush the biscuits into fine crumbs. Mix them with peanut butter (or your chosen fat) until a moist mixture forms. Line the bases of the moulds with the mixture and press down firmly with a teaspoon to compact it. Blend the curd cheese with the protein cream until completely smooth and uniform.
Fill the moulds with the cheese mixture and smooth the top. Place in the freezer for at least 1.5 hours until the cheesecakes are well chilled and set. Melt the white chocolate in a bain-marie or in the microwave (optionally add a little oil for better fluidity). Pour the chocolate over the chilled cheesecakes and sprinkle with chopped nuts.
You can also decorate them with small chocolates or an extra portion of cream.
Why is it worth it?
Because it's a dessert that looks impressive and doesn't require baking or lengthy preparation. Cottage cheese combined with protein cream gives a dense, creamy texture and a distinct caramel flavour with a hint of nuts. The mini form makes it easy to control the portion size, and the whole thing is great as a quick dessert, a snack with coffee or something ‘to go’ when you feel like something specific but without too much hassle.
