Recipe for vege-granola with blueberries and coconut yoghurt

There are some breakfasts that act as a gentle start to the day — they are filling but not heavy, smell fresh and have something relaxing about them. This vegan granola is just like that: crunchy, slightly caramelised from the maple syrup and full of nuts that add character. Combined with coconut yoghurt, it creates a bowl that looks like a healthy dessert and tastes even better.

The maple aroma, delicate coconut and natural sweetness of blueberries give this granola depth and a pleasant, ‘warm’ note. When taken out of the oven, it smells like a small home bakery, and combining it with creamy coconut yoghurt and added plant protein gives the perfect balance between dessert pleasure and a nutritious meal.

Ingredients for maple granola with blueberries

  • 40 g oat flakes
  • 20 g chopped walnuts
  • 20 g chopped almonds
  • 20 g sunflower seeds
  • 20 g pumpkin seeds
  • 20 g coconut flakes
  • 1 tablespoon maple syrup
  • 1 tablespoon melted coconut oil
  • 50 g dried blueberries

Ingredients for coconut yoghurt

  • 150 g coconut yoghurt
  • 1 tablespoon maple syrup (optional)
  • 1 scoop (approx. 30 g) VEGAN PROTEIN 

Preparation

In a large bowl, combine the oats, nuts, almonds, sunflower seeds, pumpkin seeds and coconut flakes, stirring to distribute evenly. Add the maple syrup and melted coconut oil and stir again to form a moist, slightly sticky mixture. Spread the granola on a baking tray lined with baking paper and bake for 15-20 minutes at 160°C until golden brown. Once cooled, stir in the dried blueberries.

In a separate bowl, combine the coconut yoghurt with maple syrup (if you want a sweeter result) and VEGAN PROTEIN. Put a portion of granola in a bowl and top with the yoghurt cream. You can decorate it with fresh blueberries or an extra pinch of nuts.
