Recipe for tapioca dessert with Whey Isolate Tropical and fruit

This dessert combines the creamy delicacy of tapioca with the exotic flavour profile of fruit and a tropical touch of whey protein. It is light, elegant in form and perfect as a meal finale or a sweet snack during the day. It looks impressive in a dessert bowl, yet remains simple to prepare.

Exotic creaminess with fruity freshness

The pearl-like texture of tapioca becomes velvety and subtle when cooked, blending perfectly with coconut milk. The addition of Whey Isolate Tropical brings a distinct fruity note that naturally complements mango, kiwi and pitaya. The whole dish is slightly sweet, fresh and pleasantly refreshing, especially when chilled. 

Ingredients (2 servings)

  • 1/3 cup tapioca pearls
  • 250 ml coconut milk
  • 1/4 cup water
  • 1 scoop Whey Isolate Tropical
  • 1 tablespoon chia seeds
  • 1–2 tablespoons honey or ALLNATURE agave syrup
  • 1 mango
  • 1 kiwi
  • 1/2 dragon fruit (pitaya)
  • a few mint leaves (optional)

Preparation

Pour the coconut milk and water into a saucepan and bring to the boil. Add the tapioca pearls, reduce the heat and cook for about 12–15 minutes, stirring frequently, until the pearls become almost completely transparent and the mixture thickens noticeably. Remove the saucepan from the heat and set aside for a few minutes to allow the tapioca to stabilise in consistency.

When the mixture has cooled slightly, add a scoop of Whey Isolate Tropical and stir thoroughly until the powder is completely dissolved. Then add the chia seeds and sweeten with honey or agave syrup to your liking.

Prepare the fruit just before serving: dice the mango, slice the kiwi into half-slices and dice the dragon fruit. Transfer the tapioca to glasses or cups and top with fresh fruit. You can gently drizzle with an additional portion of honey or agave and garnish with mint leaves.
