Distinctive flavours in a light, baked version

The combination of flour and milk-based batter with hot spices creates a delicate, golden coating that sticks well to the cauliflower florets. The Habanero Hot Chili sauce, combined with honey, soy sauce, rice vinegar and ginger, creates a glaze with a perfect balance of heat, sweetness and acidity. Finished with sesame seeds and chives, it looks impressive and tastes like a dish from a good Asian restaurant.

Ingredients

For the cauliflower:

  • 1 large head of cauliflower
  • 1 cup of flour
  • 1 cup of milk
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper

For the spicy sauce:

  • 1/4 cup of Allnutrition Habanero Hot Chili Sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds (for garnish)
  • chives (for garnish)

Preparation

Divide the cauliflower into small florets. In a large bowl, mix the flour, milk, garlic powder, paprika, salt and pepper to form a smooth, thick batter. Dip the cauliflower florets into the batter, allowing the excess to drip off. Place them on a baking tray lined with baking paper and bake in an oven preheated to 210°C for about 25 minutes, until the coating is nicely browned.

In the meantime, prepare the sauce: in a bowl, combine the Habanero Hot Chili sauce, soy sauce, honey, rice vinegar, sesame oil, pressed garlic and grated ginger. Mix until the ingredients form a uniform glaze.

When the cauliflower is baked, remove it from the oven and gently coat it in the prepared sauce. Place it back on the baking tray and bake for another 10 minutes to brown and caramelise the glaze.

After baking, sprinkle with sesame seeds and chopped chives.
