This spread is an example of a simple but very distinctive combination of flavours. Hot-smoked salmon with pepper gives it depth and character, horseradish cream cheese adds a delicate spiciness, and pickled cucumbers and dill provide freshness and lightness. Creamy texture and distinct, savoury flavour

After shredding the salmon and combining it with cream cheese, a smooth but not uniform mixture is created, with noticeable pieces of fish and other ingredients. Pickled cucumbers cut through the fattiness, onion adds sharpness, and dill rounds it all off with a fresh, classic aroma. Linseed oil enriches the flavour and gives the spread a delicate velvety texture.

Ingredients

  • 125 g hot-smoked salmon with pepper
  • 100 g horseradish cream cheese (e.g. Almette)
  • 1 teaspoon vegan mayonnaise (approx. 5 g)
  • 1 teaspoon linseed oil (approx. 5 g)
  • 2 small pickled gherkins, finely chopped (approx. 80 g)
  • 1/2 small red onion, very finely chopped (approx. 30 g)
  • approx. 1/3 bunch of dill, finely chopped (approx. 10 g)
  • freshly ground pepper

optional: chilli or sweet paprika

Preparation

Remove the salmon from the packaging and, if it has skin, remove it. Break the fish into smaller pieces with a fork, preserving its delicate structure. Finely chop the pickled cucumbers and onion, and finely chop the dill.

In a bowl, combine the salmon with horseradish cream cheese, vegan mayonnaise and linseed oil. Mix until creamy but still chunky. Then add the cucumbers, onion and dill, and mix thoroughly. Season with freshly ground pepper, and if you like spicier notes, add a pinch of chilli or sweet paprika. Taste and season to your liking if necessary.

Why is it worth making?

Because it's a quick spread with a very good composition that can be prepared in a few minutes without using a blender. It's filling, intense in flavour and extremely versatile — it goes well with bread, rice cakes, as a filling for wraps or an addition to salads. It works well both on a daily basis and in a more "formal" version.
