Greek yoghurt enriched with protein supplement and the addition of pistachios and strawberries creates a mixture with the perfect consistency: creamy, slightly dense and great for freezing. After a few hours in the freezer, you get a result that resembles branded ice cream bars, only in a much healthier, homemade version. The biscuits retain their shape, and the whole thing looks really appetising when cut.

In a bowl, combine the yoghurt with the protein supplement, finely chopped strawberries and chopped pistachios. If you prefer a sweeter version, add xylitol and mix until smooth and uniform.

Line a baking tin with cling film or baking paper. Place four biscuits on the bottom to form the first layer. Pour in the yoghurt mixture and spread it evenly. Place another four biscuits on top, gently pressing them into the mixture. Place the mould in the freezer for a few hours — preferably at least 3-4 hours — so that the mixture sets well. Once removed, cut the block into 4 equal sandwiches.
