Soft interior, fruity acidity and a delicately baked top
When baked, clafoutis has a characteristic creamy, cake-like texture — something between a pancake and a delicate baked pudding. During baking, the cherries release juice that permeates the dough, giving it distinctiveness and freshness. The addition of cherry-flavoured protein supplement subtly emphasises the fruity character of the dessert without dominating the classic recipe.
Ingredients
- 300 g pitted cherries (fresh or frozen)
- 3 eggs
- 1 cup milk (cow's or plant-based)
- 80 g natural or Greek yoghurt
- 3/4 cup wheat or spelt flour
- 1 scoop Whey Cherry
- 2–3 tablespoons erythritol, sugar or honey
- 1 teaspoon vanilla extract
- pinch of salt
- butter for greasing the tin
Preparation

Preheat the oven to 180°C and grease the baking tin thoroughly with butter. Spread the cherries evenly over the bottom of the tin to form a single layer.
In a bowl, combine the eggs with the milk and yoghurt, stirring until smooth. Then add the flour, Whey Cherry, sweetener of your choice, vanilla extract and a pinch of salt. Mix thoroughly with a whisk or blender until the mixture is smooth and pourable.
Gently pour the mixture over the cherries so that they are completely covered. Place the dish in the oven and bake for 30-35 minutes, until the top is lightly browned and the centre is clearly set.
After baking, remove the clafoutis from the oven and set aside for about 10 minutes — the dessert will naturally settle and stabilise its structure. Serve slightly warm or completely cooled. Optionally, you can add a spoonful of yoghurt, drizzle with honey or sprinkle with icing sugar.
Why is it worth making?
Because it is a simple, quick and extremely versatile dessert. The ingredients are easily available, and the baking itself does not require complicated techniques or long preparation. Clafoutis tastes great both warm and chilled, and the toppings can be adapted to the occasion — from yoghurt to honey to a delicate dusting of icing sugar.
