Cut the roll in half and toast it in a pan sprayed with a thin layer of cooking oil until it is lightly golden and crispy. Remove it from the pan and wipe the surface with a paper towel.
Divide the meat into portions of about 80 g and form loose balls without kneading them too much. Season with salt and pepper just before frying. Heat the pan very hot, place a meat ball in it and immediately flatten it through baking paper with the bottom of a pot or spatula to form a thin cutlet. Fry for about a minute and a half until the bottom is browned, then turn, place a slice of cheddar on top and fry for another minute or so until the cheese melts.
Spread honey mustard and ketchup on the bottom half of the bun, add finely chopped onion, pickled gherkin, lettuce and tomato. Place the hot patties on top of the vegetables, cover with the top half of the bun spread with the rest of the sauces and serve immediately.
